Protein-Packed Blueberry Coconut Smoothie Bowl
Banish the blues with this protein-packed blueberry coconut smoothie bowl! By adding one container of ridiculously creamy Blueberry Muuna cottage cheese, you’ll add 15g of protein! The fresh blueberries, dragonfruit, and crunchy coconut flakes add a beautiful topping as well as flavor.
- 1 Container of 5.3oz. Blueberry Muuna cottage cheese
- 2 cups Frozen unsweetened pineapple chunks
- ½ cup Coconut water with pulp
- 1 ½ tsp. Blue spirulina powder (optional)
- ¼ cup Fresh blueberries
- 2 Tbsp. Toasted coconut flakes
- ⅛ cup Sliced Dragonfruit/pitaya (optional)
- In a blender, add coconut water, cottage cheese, pineapple chunks, and spirulina powder. Blend until combined. Note: Consistency will be slightly thicker than a drinkable smoothie.
- Pour into 2 bowls and top with blueberries, toasted coconut and dragonfruit (optional).
- Enjoy immediately!
